Almond Butter Chocolate Chip Cookies - Low Carb Gluten Free

What better thing to do on a cold and snowy Sunday afternoon than bake cookies!

I started out by baking some peanut butter cookies for my kids, but then remembered a jar of almond butter that had been sitting for a while in the cupboard. So I also made up a batch of  Almond Butter Chocolate Chip Cookies and I have to say that they actually turned out pretty good.

These make a nice breakfast for those mornings when you're in a rush with only time to grab a quick cup of coffee.  They are a little crumbly but if you allow them to cool completely before trying to remove them from the cookie sheet you'll have better results.

Ingredients:
1 cup almond butter
2 eggs
1 tsp. vanilla
3/4 cup granulated sweetener (like swerve)
 1/2 cup chocolate chips

Directions:
Preheat oven to 350 degrees.
Beat your eggs and almond butter until well mixed then add your vanilla and granulated sweetener before folding in the chocolate chips. Bake at 350 for approx 8-10 minutes and allow cookie to completely cool before removing from the pan.
